Gelatin Watermelon

Nothing screams summer to me more than watermelon! My whole family loves it. And my kids also love gelatin treats. The next time you pick up a watermelon, also plan to make this fun and yummy treat! 

Ingredients:
Watermelon (I prefer using the SMALL ones to make less gelatin at one time)
2 to 4 large boxes (6 oz.) of any flavor RED gelatin dessert mix (depends how big your watermelon is)
1¼ cups of boiling water for every 6 oz. package of gelatin you use (NO cold water will be added)

Instructions:
1. Cut the watermelon in half and cut out the yummy inside to save for eating later. Now scrape the remaining watermelon out until it’s mostly just the rind. Pour some water inside the empty watermelon halves to find out how much gelatin you will need to fill them, then pour the water out. Put the watermelon halves inside a shallow bowl to hold them steady and set aside.

2. Boil the correct amount of water (remember, 1¼ cup of water per 6 oz. package of gelatin). Add the gelatin powder and whisk into the boiling water for 2 to 3 minutes. Pour the mixture into each watermelon half till almost full and put into the refrigerator to cool for at least 4 hours. A larger watermelon will take longer.

3. Once it’s set, cut it into wedges to serve. Have fun and enjoy the yummy treat with the kids!
